Things are a little tricky this week. Our furnace stopped working on Friday, right around the time daytime temperatures in our area of Mississippi dropped to the low 40s. The part that’s needed to repair the furnace is in extremely limited supply- there are only three in the country- and getting it here will take at least four days.
We’ve moved temporarily into Hotel In-Laws. They’re out of town for the week, so I really can’t complain about having a big house to ourselves within just a few miles of home. They already have cribs and baby toys, plus the added bonus of real bacon.
As far as menu planning goes, I adjusted this week to include meals I already had in the freezer and things I could bring from home without hauling over half my pantry.
Monday: taco salad with extended family (we’re responsible for the meat and the chips)
Tuesday: stuffed shells (from the freezer) with marinara and garlic bread
Wednesday: baked taquitos (from the freezer)
Thursday: chicken tortilla casserole
Friday: homemade pizza
Saturday: we’ll be at the beach for spring break!
