Menu Plan Monday: February 25-March 3

I’m typically pretty strategic in my menu planning.

Thursdays are usually breakfast for dinner- brinner- because it’s easy, which is just what I need at the end of the week.

Fridays are often a date night, because the kids spend most Friday nights with my in-laws. If Jon and I don’t go out, we just eat something quick and easy at home.

Saturday is almost always pizza. It’s our family movie night, so I make pizza and we watch a movie. There’s often popcorn and chocolate milk, too.

Sundays, again, are easy. We’re soaking up the last of the weekend and wrapping things up before Monday morning arrives. We typically have something that requires little prep time, like sandwiches and sweet potato fries.

This week mostly follows the above formula, with the added challenge of being the end of the month. Even though our fridge is looking bare, I’m determined to make it the next few days without a trip to the grocery store.


Monday: stuffed shells from the freezer with marinara sauce

Tuesday: dinner with the in-laws

Wednesday: baked chicken taquitos from the freezer

Thursday: pumpkin pancakes (recipe coming soon) and scrambled eggs

Friday: homemade pizza

Saturday: tacos

Sunday: sandwiches and sweet potato fries
